Preserve your harvest: Drying herbs and vegetables
Preserve those extra veggies and herbs by drying them, and keep a little bit of your summer garden with you all year long.
Herbs are very easy to dry and one of the best ways to do so is by using a dehydrator. A dehydrator consists of several trays with a blower in them. A temperature can be set depending on the crop being dried—oregano, basil, thyme, and rosemary all dry very well—and you will want to ensure that the pieces being laid out on the trays are of equal size and spaced equally far apart.
As far as vegetables go, tomato, squash and hot pepper all work well in a dehydrator. (Note: When drying hot pepper make sure you are in a well-ventilated area.)
The drying time will vary depending on the crop but most will take about 24 hours to dry in a dehydrator.
