Asparagus
Asparagus is a perennial vegetable crop (comes back every year) and very easy to grow. Give the plant about three to four years and you will have a pretty massive clump of asparagus spears to enjoy year after year.
I planted these small planter boxes last spring with some asparagus plants. This spring I will take a small harvest of spears so the plant can continue to build up strength and root in.
