Wondering what to do with all of that zucchini?

Zucchini, or summer squash, amazes me every year I plant it. In about 35 to 45 days, a huge bushy plant develops, flowers and soon enough you have large, fresh zucchini to enjoy. 

Zucchini can be used so many different ways in the kitchen: roasted, grilled, baked, fried, pickled or eat it fresh. There truly is no wrong way to enjoy zucchini – even the flowers are edible!

Here is one of my favorite quick zucchini recipes:

In a glass baking dish, slice up layers of zucchini (about 1/4” thick) with slivers of onion. Lightly salt and pepper each layer. Pour fresh tomato sauce or diced tomato on top and microwave for about 5 to 10 minutes or until the zucchini begins to soften nicely.

Remove from the dish from microwave and cover it with mozzarella and parmesan cheese. Finish the dish in a 400 degree oven for about 5 to 10 minutes or until the cheese is melted and golden brown.
